Canopy, Extraction and Ducting Cleans
Fire resulting from build up of grease and dust can cause damage which may only be covered by insurance if it is proved that the system had been regularly and recently cleaned (in most cases with the last 12 months)

Kitchen exhaust cleaning is a standard part of the routine maintenance of any cooking establishment. All kitchen managers and restaurant owners should be aware of its role in fire prevention and ensure it is done on a regular basis. 

ENVIROMENTAL HEALTH The cleanliness of the kitchen exhaust system is one of the assessment criteria in the grading system for food outlets.  Enforcement action may also be takenagainst the licensees of food outlets who fail to keep their kitchen exhaust systems clean.

RECOMMENDED CLEANING INTERVALS

1) Wood burning or charcoal burning stoves, chargrills, 24 hour restaurants, and some hamburger places: 30 DAYS.


2) Many hamburger restaurants and fast food locations: 60 DAYS.


3) Average restaurant, employee cafeteria, and hotel or hospital kitchen: 90 DAYS.


4) Pizza places, convelesant hospital, small snack bar, oven hood: 180 DAYS.


5)
Canopies over non-grease-creating appliances such as steam kettles, dishwashers, soup vats, etc ONE YEAR.


METHOD STATEMENT


1
.Decontamination of extract ducting shall be carried out in a direction towards the air handling unit.

2.Access shall be installed as and when required to gain suitable entry into the ductwork to facilitate the cleaning.  It is estimated that access will be required every 4 metres.

3.All internal surfaces are degreased and the internal contamination and residue removed.

4.The extract fan is isolated and both the housing and the impeller blades are chemically cleaned, by means of steam or manual cleaning with heavy-duty detergent.

5.All working areas are left as found.
